Ginger and Red Curry Marinated Pork Loin
Ingredients
1 Pork Loin bone in 2 Tbsp Thai red curry paste 1 bulb ginger, grated 1 Stick lemon grass, chopped 200ml fish sauce 100ml Sesame Oil 4 limes, juice and zest 1 Iceburg Lettuce Tortilla Bread
Method
- Trim and lightly score the pork.
- Mix curry paste, ginger, lemon grass, fish sauce, sesame oil and lime together and rub evenly over the pork, turn upside down and marinate for 24 hours.
- Cook in love oven (110-120°C) for 1.5 hours and then 20-30 minutes on a high heat (180-190°C) or until pork is cooked.
- Slice Pork thinly and serve with warm tortilla, eggplant relish and shredded iceberg lettuce.
