Empanadas

Empanadas
Ingredients
2 Hans Chorizos, diced
1 medium onion, finely chopped
½ red capsicum, diced
½ green capsicum, diced
½ cup tomato pasta sauce
1 tbsp parsley or basil, chopped
2 hardboiled eggs, chopped
4 sheets frozen shortcrust pastry
Method
  • Heat oven to 200°C
  • Saute the Hans Chorizo, onion and capsicum in 1 tbsp of oil for 2-3 minutes
  • Add pasta sauce and simmer briefly
  • Check seasoning, adding salt and pepper to taste
  • Tip into a bowl and carefully fold in the chopped egg and herbs
  • Cut pastry sheets into four. Place filling in the middle, brush the edges with beaten egg and fold into a triangle. Pinch edges together to seal
  • Arrange on an oven tray. Brush tops with beaten egg and bake for 20 minutes, until golden
Serving Suggestion

Makes 16.  Serve either hot or cold.
