Pesto Pasta with Chorizo & Olives
Ingredients

4 cups short pasta (bows, spirals or macaroni)
1 medium onion, chopped
2 garlic cloves, chopped
½ red capsicum, diced
2 Hans Chorizos, sliced
½ cup Kalamata olives, pitted
½ cup green olives, stuffed
¼ - ½  cup basil pesto

Method
  • Boil pasta in salted water and drain
  • Saute onion for 2 minutes in 2 tbsp of olive oil
  • Garlic, capsicum and sliced Hans Chorizo and saute for 2-3 minutes
  • Add drained pasta, olives and pesto and mix well
  • Check seasoning, adding salt, pepper and grated parmesan cheese to taste

Serves 3-4
