Asian Pork Salad
Ingredients
1800g Pork Tenderloin, roasted/chilled/julienne
500g Glass noodles, soaked
100g Fresh Bean shoots
60g Spring onion, sliced diagonally
800g Carrot, peeled/julienne
10g Red Chilli, deseed/sliced
20g Fresh ginger, peeled/shredded
1 Garlic clove, peeled/crushed
5g Soy Sauce
5g Salt
30g Coriander, washed/picked
20ml Lemon Juice
30g Basil, washed/picked
5ml Fish Sauce
20ml Olive Oil
Method
  • Prepare dressing, combine garlic, ginger, fish sauce, lemon juice, oil and soy sauce.
  • Marinate roasted julienne pork in dressing - minimum 20 minutes.
  • Drian Soaked noodles and combine with marinated pork.
  • Add carrot, basil, spring onion, chilli and coriander to complete salad.
  • Chill and serve cold.
