HORS D'OEUVRE SELECTION

Bacon Sausage wraps with Thai dipping sauce
Wrap small sausages with rindless tail end of bacon, secure with toothpicks and cook under a hot grill until the bacon sizzles. Combine equal parts Thai fish sauce and sweet chilli sauce, add lime juice and sugar to taste and serve in a small dish for dipping.

Salami Baguette Slices
Cut slices of fresh French stick, flavour spreadable cream cheese with basil pesto and spread over the bread.  Cut salami slices in half, tear small pieces of lettuce.  Arrange lettuce and salami on each bread and secure with a toothpick pierced into a stuffed green olive.

Mini Melts
Cut discs of fresh bread the size of a Strassburg sausage, and toast on one side. Cut strassburg sausage into 5cm slices and grill lightly. Place over the toast, and add a slice of cherry tomato, then cover with strips of Swiss cheese.
Melt under a hot grill, and add a sprinkle of chopped fresh herbs, or a sprig of parsley to serve.
