Warm Potato & Salami Salad
Ingredients

1 x 375g Hans Hungarian Salami
5 medium potatoes
3 tbsp extra virgin oil
2 spring onions, chopped
150-200g sliced beans
½ cup black olives
2 tbsp basil pesto
Parsley, dill or basil, chopped
Capsicum to garnish, chopped

Method
  • Scrub or peel potatoes, then cut into 2cm cubes and boil in salted water until cooked
  • Boil beans for 5 minutes in salted water or microwave for 1-2 minutes
  • Drain potatoes, tip into a salad bowl and sprinkle on half the oil
  • Cut the Hans Hungarian Salami into cubes and saute in a pan to heat
  • Add salami, spring onion, olives and beans to potato
  • Whisk pesto with remaining oil and the herbs, pour over the salad and toss lightly
