Spicy Rice with Chorizo & Herbs
Ingredients
2 cups long grain rice
1 medium onion, chopped
2 garlic cloves, finely chopped
1 red capsicum, diced
1 green capsicum, diced
2 Hans Chorizos, thinly sliced

¾ cup black olives, sliced
¾ cup semi-dried tomatoes, chopped
2 tsp ground cumin
½ tsp chilli flakes
3 tbsp flat leaf parsley, chopped

Method
  • Boil rice in 5-6 cups of lightly salted water for 10-12 minutes
  • Drain, rinse in hot water, drain again
  • Saute onion for 2-3 minutes in 2 tablespoons olive oil
  • Add garlic, capsicum and chorizo and saute about 2 minutes
  • Add rice, olives, tomatoes, spices and salt and pepper to taste and mix thoroughly over medium heat for 1-2 minutes
  • Stir in chopped herbs and serve
